Lunch Ideas

November 26th, 2007 at 04:37 pm

As most know, I travel alot, and am in a SUV half the time. I am trying to not eat out as much, so I thought about packing my lunch for my road tours- anyone have any suggestions? It would have to be something that I can eat cold. I think Julie had mentioned about her husband having something you cna plug into your cigarette lighter- at least, I think it was her- if so, Julie, can you email me where I can get it? I thought about wraps- I already take salads.

I bought this cigarette/adapter for my car from wal-mart that has an actual outlet plug at the end. I think they are called a/c or d/c not sure. Anyhow, I plug it in and use a coffee warmer to heat up my soup. Other than sandwiches, and fruits I really can not think of anything else. Good luck...here is a link to show you what they look like(the adapters) there are some less expensive ones but they are great because you charge anything, cell phones, lap top, ipods etc

You can get small refridgerated cases that plug into cigarette lighter and act like a mini fridge. They do not hold a ton but enough for a sandwich or two and a drink. My DH got one a year or two ago at Target. I would think places like Target, Walmart or even Auto Parts stores like Pepboys would have them. I think is was less than $50.00 but I cannot remember for sure.

Yes, it was me but I forgot where i got it or what it was called. I got it about 3 years ago. It looks like an old fashion lunch box. You plug it in, and in 20 minutes you have a hot lunch. My husband also takes a cooler everyday.

Salads covers so much territory. You could do cold pasta salads with sundried tomatoes in olive oil and fresh green peppers.

Or multi-colored pasta with imitation crabmeat, peas, water chestnuts, red onion, fresh red pepper.

Lots of different cold rice salads with sauteed veggies, raisins, chopped apples, walnuts, dried apricots. Fresh fruit, maybe pretzels or nuts if you're a snack person. Check out www.recipezaar.com.

I like rolling a whole wheat tortilla/wrap filled with something as simple as refried beans, toped with lettuce, diced raw onion and grated cheddar.

Walmart carries the coolers you can plug in. We used to carry one (before I married) in the suburban while pulling the camper. Seemed silly to some, but if we wanted to eat after dark, I wasn't always comfortable pulling over and get everyone out and into the trailer and back in the dark or the rain.
    We would pack and take:

    deli meats and bread
    yogurt
    cheese sticks
fried chicken (my kids are the few who like it cold)
    mac salad
    green salads
tuna or chicken salad and those pocket breads to stuff it into
    potato salad
    trail mix, granola, pretzels...
    fruit
    prepared raw veggies and dip.
milk in a small container & baggie of cereal

ALWAYS carry a couple wet wipes and a bath towel-so if you are dressed for a meeting you can "bib" yourself. (one trip I made more messes than my kids). Our dirty dishes or cups went into a Walmart bag (stored under the car seat in a papertowel tube). My glove box always has napkins and plastic silverware in it.

Sometimes we would supplement our meal with an item from the McDonalds $1 menu.

I think it may have been Princess Perky who once posted a recipe for gronola or trail mix-I made it once and lost the directions, but remember it was good.
