Winter Crockpot Ideas

Just wondering what everyone is cooking in their crockpots this winter. I am cooking beans tonight. I LOVE any type of beans. I am using my BF's laptop, and love it- its nice to use at the cafes.

    The only thing I have ever made in a crockpot is a roast.

    I'm not a big crockpot user. I find everything that comes out of it taste the same.

    Our favorite new recipe this year is chicken tortilla soup. I use it mainly for soups, chili, etc when I need an easy, eat when we walk in the door meal. I also use it to cook spaghetti sauce and meatballs, meat for beef pot pie filling, and steak with mushroom gravy. Last night I cooked a Boston butt to use in Brunswick stew today.

    I've found that a crockpot is a great way to slowly carmelize sweet onions--these are great if you're looking for great taste yet not too bad a calorie hit. Last week, I took a large Vidalia onion & sliced it, poured over it a bit of olive oil & mixed, then threw in a handful of pine nuts and one of dried cranberries and a bunch of kale and let the crockpot do its thing. Yum!

    Oooh, I love onions! I use them in my crock pot all the time! However, I'm also an utter novice, so really, not much except chicken. It's cheap and is the only meat that comes out good for me so far. If you guys have any suggestions, I'm all ears.

    Dido, as much as I dislike kale, that recipe sounds incredible.

    I like to crockpot whatever pork I can get cheapest. Cut off fat if there is a lot. I'll just throw it in with a bit of vinegar and "liquid smoke" over all surfaces (Careful: use very little!) to serve as a marinade. Don't use a lot because you won't be removing the meat from the marinade, but cooking it in it, too. Chopped onions go in. After cooking a while I add BBQ sauce. (Basically tomato + vinegar + brown sugar, but can vary a lot!)

    Husband doesn't eat pork, but does not mind if I do. Cooks up tender and I like to use on sandwiches with finely chopped coleslaw. Texture varies according to whether I used a whole roast, sliced chops, cubed pieces. But for putting on sandwiches, if the meat is tender, the texture doesn't matter much to me. With only one person eating I divvy up leftovers into single servings for the freezer, holding back some for the fridge and using in the next few days.

    hmmm crockpot. Good idea for this Sunday and plenty of leftovers for dinner for the coming work week.

    I love a lamb stew that consists of just 5 ingredients, let's see if i can remember 'em: lamb, stock, rosemary, carrots, onions.

    All i can say is: yum.
